Just wanted to add a tip. To keep the cookie shape round, when you scoop the dough place it in your hand and roll into a ball. The cookies will keep the shape when it bakes.

My family calls these the Crack Cookies (aka Cocaine Cookies) my SIL who “doesn’t do sugar” snarfed 8 of them in 10 minutes.
Don’t tell anyone about the coconut—-they’ll never know!
I didn’t reshape them at 12 minutes but no one cared
